House-Made Sausage of the Month of July
Every month, we feature a new House-Made Sausage of the Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team, led by Chris Crowley and Ryan Wilson.
The Firecracker served with House Hot Honey
Based on the classic Southern pickled pork sausage, we brine a 50/50 mix of pork and beef with hot honey and a handful of ham aromatics, then mix it with sage, thyme, garlic, and our own blend of chiles: habanero, cayenne, guajillo, and chipotle. Stuffed in a striking red casing, the finished product has a medium heat, a savory ham aroma, and the perfect blend of “sweet heat”.
Served with a side of house-made hot honey for dipping.

Join us for a special SMOKED BRISKET BURGER THURSDAY - we will be donating 100% of the sales from our special Smoked Brisket Burger Baskets to the Kerr County Relief Fund this Thursday. Both Stiles Switch BBQ locations will be participating as well as our sister spot The Switch. 11am-sell out this Thursday.

The Special cut on the Block - the SMOKED PICANHA with House Chimichurri. This special cut is from the Sirloin Cap. We put our Texas BBQ spin on this one, slow smoking over post wood. If you are a steak lover, this one is for you!
