House-Made Sausage of the Month of JANAURY
Every month, we feature a new House-Made Sausage of the Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team, led by Chris Crowley.
THE FIRECRACKER SAUSAGE
Inspired by the classic Southern pickled pork sausage, this house-made 50/50 Beef & Pork link is loaded with hot honey & ham aromatics mixed with sage, thyme, garlic, & a blend of chiles: (habanero, cayenne, guajillo, and chipotle.) Stuffed in a striking red casing, giving it the name “THE FIRECRACKER.” Served with a side of house-made hot honey for dipping.

Dia de Enchiladas - This Sunday, we are bringing our fan favorite Brisket Chile con Carne Enchiladas & our Smoked Chicken Enchiladas. Choose your favorite plate! Our Brisket Chile con Carne Enchiladas - Smoked Brisket stuffed tortillas topped with housemade chili con carne and melted cheese. Served by the plate with Spanish Rice & pinto beans. - OR - Choose our Smoked Chicken Enchiladas - Tender smoked chicken tinga topped with fresh verde sauce and our housemade chili con queso. Served by the plate with Spanish Rice & Pinto Beans.

Nashville Hot Smoked Pork Belly Burnt Ends - we take our smoked pork belly burnt ends in and toss them in our Nashville Hot style sauce. Served over white bread and skewered with pickles.

SMOKED PRIME RIB DAY - Our Smoked Prime Rib is served by the plate. 1/2 lb of Smoked Prime Rib served with two special sides: Smoked Pork Hash with Duck Fat Roasted Potatoes & Sauteed Green Beans with Bacon & Tomatoes. Served with horseradish cream sauce and a dinner roll. Or grab this special cut by the 1/2 lb a la carte.

Smoked Brisket Burger Day! We start with house ground and smoked 1/2lb brisket burgers. Today we will be featuring (2) fan favorite burgers. The DIABLO SMOKED BRISKET CHEESEBURGER - Dressed with American cheese, pickled jalapenos, sliced Switch original sausage, and our signature Diablo sauce on a fresh jalapeno cheddar bun. Served with choice of homemade onion rings or homemade French fries. Or try the classic ALL AMERICAN SMOKED BRISKET CHEESEBURGER - dressed with American Cheese, Switch Special Sauce, and pickles. Served with your choice of homemade Onion Rings or Homemade French Fries.

SMOKED PICANAH drizzled with Chimichurri. This special cut is seared over our live fire Santa Maria grill and then slow smoked over post oak wood to finish. This is one great cut of beef. Don't skip it!

Don't skip that House Made Sausage of the Month: The Firecracker - This link is inspired by the classic Southern pickled pork sausage. House brined 50/50 mix of pork and beef mixed with hot honey and a blend of spices including sage, thyme, garlic, and chiles (habanero, cayenne, guajillo, and chipotle.) Stuffed in a "firecracker" red sausage casing. This is a perfect blend of a medium "sweet heat" Served with a side of house-made Hot Honey for dipping.
