House-Made Sausage of the Month of July
Every month, we feature a new House-Made Sausage of the Month. Keep coming back for more unique creations from the Stiles Switch Sausage Team, led by Chris Crowley.
THE FIRECRACKER
Based on the classic Southern pickled pork sausage, we brine a 50/50 mix of pork and beef with hot honey and a handful of ham aromatics, then mix it with sage, thyme, garlic, and our own blend of chiles: habanero, cayenne, guajillo, and chipotle. Stuffed in a striking red casing, the finished product has a medium heat, a savory ham aroma, and the perfect blend of “sweet heat."
Served with a side of House Hot Honey for dipping!

SMOKED PRIME RIB DAY - Our Smoked Prime Rib is served by the plate. 1/2 lb of Smoked Prime Rib served with two special sides: Smoked Pork Hash with Duck Fat Roasted Potatoes & Sauteed Green Beans with Bacon & Tomatoes. Served with horseradish cream sauce and a dinner roll. Or grab this special cut by the 1/2 lb a la carte.

Smoked Brisket Burger Day! We start with house-ground and smoked 1/2lb brisket burgers. Today, try the BACON, MUSHROOM, SWISS SMOKED BRISKET BURGER - dressed with crispy Bacon, Sauteed Mushrooms, Swiss Cheese, Lettuce, Tomato, Mayo, & Pickles. Choice of Homemade Onion Rings or Homemade Fries. Or keep it classic and try the ALL AMERICAN SMOKED BRISKET CHEESEBURGER - dressed with American Cheese, Switch Special Sauce, and pickles. Both burgers are served with your choice of homemade Onion Rings or Homemade French Fries.

SMOKED PORCHETTA -House made Smoked Porchetta. Our porchetta is slow-smoked over post oak wood. We keep in the traditional Italian style by stuffing with fresh herbs, fresh parmesan cheese, and citrus. The Porchetta is slow smoked over post oak wood and finished off hot to create a crispy, crunchy, cracklin outer crust. Served with a side of house Citrus Verde sauce. A fragrant blend of fresh herbs (parsley, mint, tarragon, and chives) is seasoned with brined capers, crushed red pepper, black pepper, and a touch of honey. The sauce gets blended smooth with extra virgin olive oil, and lemon juice and zest give it a bright pop! Perfectly paired with the Stiles Switch Smoked Porchetta! We will be slicing to order on the block this Saturday by the 1/2lb or grab it by the plate with your choice of two of your favorite sides!
